Seomin Galbi 서민갈비

Seomin Galbi is a Korean barbecue restaurant at 8-5 Deulan-ro in Dusan-dong, Daegu, built around marinated pork ribs and fresh Jeju black pork. Kim Jae-dong Galbi, named after the cook associated with the dish, is a seasoned pork rib cut thinner than conventional galbi. More of the meat touches both the marinade and the grill, so its cooking surface and inner thickness differ from a thick rib cut. Staff grill the meat at the table, spreading the thin pieces, turning them over the heat, and dividing them into bite-size portions. Jeju black pork saeng-gui takes the opposite direction by presenting pork without a heavy marinade and centering its grain and fat. The restaurant receives pork directly from farms in Jeju, and meat specialists trim the rib sections in house. Sweet and salty seasoning coats the surface of Kim Jae-dong Galbi, while the fresh black-pork grill exposes cooked meat and rendered fat more directly. Abalone appears in two forms outside the pork menu. Grilled abalone applies direct heat to its firm flesh, while abalone ttukbaegi places it in hot broth and adds moisture. Pressure-cooked stone-pot rice supplies hot grains beside both meat and soup. Cold noodles divide into mul-naengmyeon in clear chilled broth and bibim makguksu mixed with seasoning. The former follows the grill with cold liquid; the latter coats buckwheat noodles in a denser spicy sauce that differs from the rib marinade. The dining room is a large, sectioned space with roughly three hundred seats rather than a single compact barbecue room. Thin seasoned rib, unmarinated Jeju black pork, grilled or simmered abalone, stone-pot rice, and two cold-noodle formats give the menu distinct choices of seasoning, heat, and moisture.
