Namwon Chueotang 남원추어탕

Steamed cabbage from the self-service counter, wrapped around rice and a dab of salted hairtail innards, makes a salty bite between spoonfuls of soup. The basic chueotang is ground so fine that no trace of the loach remains, while tongchueotang has the fish whole, with a bite to match.
