Raw blue crab marinated in soy sauce, ganjang gejang, anchors the menu in Bukchon, with other Korean dishes built around it. Cooked dishes such as braised short ribs (galbi-jjim) and grilled eel are there too, so anyone at the table who skips raw crab still has a full meal. Ordering the crab alongside one of the cooked dishes lets a table share raw and cooked food together.
