Hyeonpung Galbijeong 현풍 갈비정

Hyeonpung Galbijeong is a charcoal-grill restaurant on the second floor of 110 Techno Sangeop-ro in Yuga-eup, Dalseong-gun, Daegu. Its meat selection includes fresh pork neck ribs, pork belly, large bone-in beef ribs, aged pork belly, pork skirt meat, yukhoe, and pork skin, with salt-grilled king prawns extending the grill beyond red meat. One table can compare seasoned pork with relatively plain fresh cuts, then move between pork, beef, and seafood. Staff control the fire and cook the meat from beginning to end at every seat. Pork ribs require repeated turning so their seasoning does not scorch, belly alternates lean and fatty surfaces against the heat, and the large beef rib is cooked around the bone before its meat is divided. Diners receive each cut as it reaches the proper stage instead of managing several pieces over charcoal themselves. Soybean paste stew and cold noodles follow the grill. Cold noodles with bibim sauce add chilled, springy strands and chile seasoning after the warm fat of pork or beef. A lunch meal can combine ribs with kimchi stew and steamed egg.
