Bakgane Sundubu 박가네순두부

Each bowl of sundubu, a soft tofu stew, arrives with a bowl of rice and assorted namul greens meant to be mixed with gochujang into bibimbap. The stew comes as red seafood sundubu with clams and shellfish, a clear version that holds back the chili so tofu and stock lead, or perilla mushroom sundubu with ground perilla seeds and mushrooms. A few spoonfuls of stew added to the bibimbap loosen the gochujang.
